Chunky Spicy Cheese Dip Recipe (Queso)

With Superbowl Sunday around the corner and Spring Break coming soon, people tend to get together in large groups for fun festivities. Most of us like to cook up something easy to take to events and you can’t ever go wrong with a yummy cheese dip! Here is my Chunky Spicy Cheese Dip Recipe also known as Queso. It’s not only an easy recipe but, always a hit at parties, potlucks, and BBQs! Hope you indulge, enjoy and pass along!

What you need:

Large Crock pot
Crock pot liners (for easy clean up)

Ingredients:

1 lb. Jimmy Dean sausage, browned and drained (hot or mild depending on how much spice you like)
1 lb. 100% lean ground beef, browned and drained
2 1-pound block of Velveeta cheese, cut into large cubes (I have used other brands such as HEB, Hill Country Fare, & even Dollar General; Velveeta is the best, D.G was the runner up)
2 10-ounce cans (undrained) of Rotel diced tomatoes with green chilies (hot or original depending on how much spice you like)
Bags of Corn Chips
At my house we like it SPICY…so I use hot Rotel & spicy Jimmy Dean

Directions:

Combine all ingredients in crockpot. Place crockpot on LOW heat setting. Cover with lid and heat one hour. Keep on LOW setting until ready to serve. Serves 8-10. Enjoy! *For larger parties, double up on all ingredients. Don’t forget the Tostitos Scoops for dipping!
